Sam-heum Jeong pitched in the KBO for 12 years. He got the nickname because he was good at pitching at night.
Jeong was drafted by the MBC Blue Dragons in the first round of the 1985 KBO draft, and he was 9-12 with a 3.13 ERA in his first season. He was 4th in losses (13 behind Hiroaki Fukushi) and 6th in strikeouts (between Dong-yeol Sun and Il-eon Choi). Jeong's ERA rose to 4.18 in 18 games in 1986, then he went 6-13 with a 2.86 ERA in 1987. He led the league in losses (tied with Sang-moon Yang), and he was 5th in strikeouts (tied with Sang-kun Lee). He struggled again in 1988 as his ERA was 5.67 with a 5-16 record, and he led the league in homers allowed and losses.
The Goseong native went 5-7 with a 3.67 ERA in 1989, and he became a reliever in 1990. He notched 23 saves with a 8-9 record and a 2.78 ERA in a league-leading 55 appearances, and he was 2nd in saves (4 behind Jin-woo Song). He pitched in all 4 games in the 1990 Korean Series with a 2.16 ERA and a save, and he won his first title as the LG Twins swept the Samsung Lions. Jeong was 12-15 with a 4.18 ERA and 8 saves in 1991, and he led the league in losses again. He was also 6th in saves (19 behind Kyu-jae Cho), 9th in strikeouts (between Yong-deok Han and Ki-bum Kim) and 9th in wins (tied with Yong-soo Kim, Ki-bum Kim and Myung-won Jeong).
Jeong was 14-11 with a 4.04 ERA in 1992, and he was 6th in wins (tied with Jeong-soo Kim, Jeong-soon Jang and Min-chul Chung) and 5th in strikeouts (between Song and Jong-seok Yeom). He was still a solid starter in 1993], and he had a 15-11 record with a 2.99 ERA. Jeong was 2nd in wins (2 behind Kye-hyun Cho) and 6th in losses (2 behind Young-jae Sung). He went 15-8 with a 2.95 ERA in 1994, and he was 5th in wins (3 behind Sang-Hoon Lee and Cho) and 9th in ERA (between Tae-han Kim and Hyung-kwang Joo). Jeong was 8-9 with a 3.81 ERA in 1995, and he had a 4.29 ERA in 25 appearances in 1996. He announced his retirement after the 1996 season, and he was the pitching coach for the Twins from 1997 to 2001 and for their minor league team from 2002 to 2003. He later coached Shinil High School from 2004 to 2006 and Bucheon High School in 2008. He also managed Jiangsu Hopestars from 2016 to 2017.
Overall, Jeong was 106-121 with a 3.62 ERA, struck out 941 and pitched 1,894 2/3 innings in 12 seasons in the KBO. As of 2024, he was 26th in wins (between Hyun-jin Ryu and Myung-hwan Park), 7th in losses (between Sang-mok Lee and Won-jun Chang), 11th in innings (between Seung-hwan Yoon and Hak-kil Yoon), 13th in hits (between Yeom and Chung) and 44th in strikeouts (between Eun-beom Song and Woo-ram Jung).
