He pitched 35 games with a 2.91 ERA (68 K, 39 BB in 52 2/3 IP) there in 2014, then the Minnesota Twins signed him. He then had a 3.65 ERA in 17 games for the Miracle in 2016, but his ERA rose to 5.40 in 18 games for the Chattanooga Lookouts. Westphal was 1-2 with a 3.29 ERA with York in 2018, and his ERA was 4.85 in 10 games for the Lancaster Barnstormers. He also went 2-3 with a 2.70 ERA for the Melbourne Aces in the 2018-2019 Australian Baseball League; his 46 K were one shy of making the top 10, as Travis Blackley's 47 were 10th.

In 2019, Westphal retained the starter role he held that winter, and he had a 11-2 record with a 2.82 ERA for the Chicago Dogs. He was among the American Association leaders in wins (3rd, behind Mitchell Lambson and Kevin McGovern), strikeouts (133, 3rd, trailing Austin Wright and Lambson) and ERA (3rd, after Justin Sinibaldi and Angel Ventura). [2] Lambson beat him out as the All-Star starting pitcher. He went 0-2 with a 1.83 ERA for the Aguilas Cibaenas in the Dominican League that winter, and he was 3-2 with a 3.42 ERA for the Dogs in a COVID-19-shortened 2020. His ERA was a solid 1.39 in 6 starts for the High Point Rockers in 2021, and the San Diego Padres signed him. He went 2-5 with a 5.84 ERA for the AAA El Paso Chihuahuas. In his AAA debut, he threw a rain-shortened five-inning no-hitter against the Albuquerque Isotopes. [3] He improved to 2-2 with a 4.19 ERA in 2022; the Padres still released him after the '22 season. Westphal struggled with the Kane County Cougars in 2023 as his ERA was 7.82 in 7 starts, and he also had a 4.38 ERA in 13 relief outings for the Charleston Dirty Birds and a 3.00 ERA in 5 games for the Southern Maryland Blue Crabs. He pitched 5 games with a 0.79 ERA for the Indios de Mayaguez in winter ball. He appeared in the 2024 Caribbean Series, striking out five in 2 1/3 shutout innings for the Criollos de Caguas despite allowing six baserunners.

The Padres signed Westphal in June 5, 2024 after he had a 3.32 ERA with a 2-2 record for the Toros de Tijuana, but his ERA was 7.27 in 13 games for the Chihuahuas. He was released in August, and the Rakuten Monkeys signed him. He made his CPBL debut on October 9 against the CTBC Brothers, and he allowed a run in 3 2/3 innings[4]
