Gaitan began his professional career with the Toros de Tijuana, playing one game and not batting in the 2016 Mexican League. In March, he was signed by Chicago Cubs scouts Sergio Hernandez and Louie Eljaua [1], and he hit .280/.329/.360 with 14 steals for the DSL Cubs 2 in 2017. He slumped to .192/.294/.247 for the AZL Cubs 2 in 2018, and he left the Cubs chain. Gaitan went 1-for-2 for the Toros in 2019, and he was 3-for-26 for the Yaquis de Obregon in the winter. He then hit .226/.258/.339 in Obregon after the Mexican League shut down in 2020 due to the Covid-19 pandemic, and he also had a .239/.282/.254 batting line for the Mayos de Navojoa that season. Gaitan struggled in 2021 as he went 1-for-12 with El Águila de Veracruz, and he was 2-for-19 with the Mayos.

The Tijuana native hit .241/.297/.384 with 2 homers in Veracruz in 2022, and he slumped to .179/.233/.250 with the Venados de Mazatlan in the winter. Gaitan broke out in 2023, and he crushed 5 homers with a .287/.342/.418 batting line for the Eagles. He extended his solid performance in the winter as he hit .316/.368/.434 with the Venados, and he crushed 4 homers with a .260/.316/.387 batting line in Veracruz in 2024. Gaitan played 56 games in Mazatlan that winter, and his batting line was .255/.368/.292.

Gaitan then represented Mexico in the 2024 Premier 12, starting at right field for them in all 5 of their games. In their opener, he went 3-for-4 with a run scored against Venezuela, then he was 3-for-4 again with 3 RBI against Puerto Rico. Gaitan hit a 2-run double against Andrés Santiago, and he knocked in the other run with a single against Osvaldo Berríos in the 6th inning. He was red-hot in the event, and he crushed a solo shot against Wilfredo Pereira of Panama in his next game. Gaitan went 2-for-4 with 2 doubles against Kevin Kelly of the Netherlands, but he was 0-for-3 versus the USA and Mexico was eliminated. Gaitan hit .526/.591/.895 in the entire event, and he was 6th in hits, 2nd in doubles (tied with Jhonny Santos) and 2nd in batting average (.099 behind Chieh-Hsien Chen). He was left off the All-World team, as Chandler Simpson and Shota Morishita joined Chen in the outfield. [2]
