The son of big leaguer Gene Roof, catcher Eric Roof made his professional debut in 2009.

Roof hit .490 as a high school senior. At junior college, he batted .338. He transferred to Michigan State and hit .247 with a .347 OBP as a sophomore in 2007. He batted .308/.404/.423 in 2008. He was selected by the Detroit Tigers in the 46th round of the 2008 amateur draft but did not sign. He improved to .345/.440/.525 as a senior with 46 runs in 54 games. The Tigers then drafted him again in the 18th round of the 2009 amateur draft, and he made his pro debut that summer with the Oneonta Tigers, hitting .213/.291/.283 in 41 games and allowing 26 steals in 28 tries.

Roof was an assistant coach at Michigan State University in 2013-2014 and Eastern Michigan University in 2015-2017. He was interim head coach at EMU in 2018, before being named permanent head coach in 2019.

In addition to his father, Roof's brothers Shawn Roof and Jonathan Roof play in the minors. His uncle Phil Roof also played in the majors, while three other uncles (David Roof, Adrian Roof, and Paul Roof) played in the minors.
