Edward Valdez signed with the Cincinnati Reds in 1999. He debuted as a pro in 2000 with the DSL Reds, going 6-4 with a 3.36 ERA. In '01, he had a 3-3, 2.84 record with the same club. He came to the US in 2002 with the GCL Reds, going 6-2 with a 2.04 ERA and .206 opponent average; he was promoted to the Chattanooga Lookouts and allowed one run in five innings. He was 9th in the Gulf Coast League in ERA.

At age 23, Valdez was 11-3 with a 3.72 ERA for the Dayton Dragons and 5-2 with a 3.40 ERA for the Potomac Cannons with only 38 walks in 169 1/3 IP overall. He led the Reds farm system in victories and innings. Eddy spent 2004 with Potomac but fell to 8-6 with 3 saves and a 4.06 ERA.

Valdez began 2005 with Chattanooga and was just 1-3 with a 6.94 ERA after 12 games. He was placed on the Disabled List with shoulder problems. When he returned, it was with the Sarasota Reds, where he had a 3-2, 1.95 record. In 2006, Edward was 7-10 with a 3.89 ERA for the Lookouts.

In 2007, Valdez moved to the Washington Nationals system and split time between the Harrisburg Senators (2 H, 0 R in 5 IP) and the Columbus Clippers (2-5, 2 Sv, 4.74). He then signed with the Colorado Rockies. He was with the Tulsa Drillers (4-4, 2 Sv, 4.12 in 46 G) and the Colorado Springs Sky Sox (1-0, 12 H, 7 R in 6 1/3 IP).

Valdez signed with the Chunichi Dragons for 2010. He made his debut for them on March 28 with a rough outing, retiring only one of seven batters faced with 3 hits allowed. He was charged with no earned runs but probably at least one unearned run.
