Oishi was selected by the Seibu Lions in the third round of the 1979 NPB draft, and he was named the batterymate of their ace Osamu Higashio as a rookie. He started in 28 of 33 Higashio's starts, and he ended up hitting .205/.273/.244 in 77 games in 1980. Oishi slumped to .185/.293/.229 in 1982, so he needed to share the starting spot with Masahiro Kuroda. The Tokushima native hit .210/.296/.329 in 1983, and he was 0-for-4 in the 1983 Nippon Series. Since Tsutomu Ito became the starting catcher in 1984, Oishi mainly stayed in the ni-gun and he only played 13 games with the big club. The Lions then traded him to the Chunichi Dragons for Tadashi Sugimoto and Yasushi Tao. Oishi hit .245/.318/.297 in 1985 as a backup behind Takayoshi Nakao. He then hit .170/.223/.216 in 1986, and he only played 45 games with a .205/.262/.295 batting line in 1987.
Oishi's batting line was .184/.229/.214 in 115 games in 1988, and he was used as the batterymate of reliever Genji Kaku. He was 0-for-3 in the 1988 Nippon Series, and the Dragons were beaten by the Lions in 5 games. He never played more than 40 games after this season, and he announced his retirement in 1991. He then coached the Dragons from 1992 to 1994, the Lions from 1995 to 1997 and from 2000 to 2001. He jumped to the Fukuoka Daiei Hawks and coached them from 2002 to 2008, and he was a coach for the Lions from 2009 to 2010.
Overall, Oishi hit .206/.277/.268 with 256 hits and 12 homers in 12 seasons in NPB.
