Moon-seok Jang pitched in the Korea Baseball Organization for 10 years.
Jang debuted with the LG Twins in 1997, going 0-2 with a 13.50 ERA. He went 4-3 with four saves and a 4.21 ERA in 1999. He was 9-8 with 11 saves and a 3.42 ERA the next year, finishing 6th in the 2000 KBO in ERA (between Jin-woo Song and Min-tae Jeong), 7th in saves and 8th in strikeouts (134). He fell to 1-3, 7.74 in 2001. In 2002, he had a career year: 10-3, 4 Sv, 1.60. Had he qualified, he would have led in ERA, well ahead of Narciso Elvira's 2.50. He saved game 4 of the 2002 Korean Series but LG fell in six to the Samsung Lions. Jang went 9-6 with a 4.40 ERA in 2003.
In 2004, the right-hander went 10-8 with a save and a 4.03 ERA. He tied Yong-joon Cho and Jae-young Oh for 10th in wins. He went 5-5 with 7 saves and a 3.75 ERA in 2005. He was then traded to the KIA Tigers. He was 1-3 with 15 saves and a 4.36 ERA his first year with the Tigers, tying Tae-hyon Chong for 9th in the 2006 KBO in saves. He only would pitch one more season in the KBO: no decisions in 21 games with a 5.40 ERA in 2008.
He retired with a 49-41, 4.05 record and 42 saves in 287 games.
