He was drafted in the 23rd round of the 2005 amateur draft, was signed by scout Glenn Tufts, and began his professional career that same year. Joe made his major league debut with the Giants on April 7, 2009, earning a win in relief over the Milwaukee Brewers even though he gave up 2 runs in as many innings. After another relief appearance two days later, he went back to the minors and did not come back to San Francisco until August. On his return on August 5th, he started a game against the Houston Astros and received credit for a 10-6 win, after pitching 5 innings and allowing 3 runs. He was the last Giants pitcher to record a win in his first major league start until Dereck Rodriguez did so in 2018. However, he pitched poorly the rest of the month while taking a regular turn as a starter, his ERA reaching 7.52 by the end of August. He then made a couple of relief appearances in September to finish at 3-2, 7.50 in 9 games.

He continued pitching from time to time in the majors until 2013, but made only one start after his first season and only won one more game, in his final season with the Cleveland Indians.
