Wilson was two-time All-State in high school, leading the team to their first state title in 2007. He led Tennessee high schoolers with 71 RBI in 2007. A starter as a college freshman, he hit .250/.347/.406 in 2009. In 2010, he batted .341/.433/.486 with 19 doubles in 55 games. He tied Chris Taladay for fourth in Conference USA with 19 doubles.

During 2011, the junior slumped to .286/.386/.433 but was 5th in C-USA with 51 RBI, tied for 7th with 51 runs and fielded .980 at third base. Returning for a senior season, he made significant strides, producing at a .320/.394/.615 clip with 17 home runs, 47 runs and 64 RBI in 57 games. He led the conference in home runs (3 over D.J. Hicks), OPS (11 points ahead of Hicks), slugging (by 48 points) and total bases (142). He was second in RBI, tied for third with 17 doubles and was 8th in runs. He tied for 10th in NCAA Division I in home runs. He was named Conference USA Player of the Year. He finished among Memphis's career top five in hits, doubles, home runs, runs and RBI.

The St. Louis Cardinals picked Wilson in the tenth round of the 2012 amateur draft. He hit .275/.341/.444 with the Batavia Muckdogs that summer. He split 2013 between the Peoria Chiefs (.264/.350/.468, 15 HR, 72 RBI in 97 G) and Palm Beach Cardinals (.179/.294/.291 in 32 G). The second baseman tied Jonathan Rodriguez for 4th in the Cards chain in home runs (18), was third in RBI (82, behind Ruben Gotay and Brock Peterson), tied Gotay for third in runs (75), was 7th in walks (57) and was 5th in doubles (28). He hit .304/.373/.413 with 13 RBI in 13 games for the Arizona Fall League's Salt River Rafters.

In 2014, Wilson remained strong with Palm Beach (.298/.358/.397 in 30 G) and the Springfield Cardinals (.305/.366/.519 in 36 G) but a left knee injury cut his season short in mid-June. Despite the injury, he tied for fourth in the St. Louis farm system with 25 doubles. He returned to play in the AFL again, batting .289/.347/.389 for the Peoria Javelinas.

Jacob began 2015 with Springfield and showed good pop (.225/.326/.460, 7 HR in 34 G) then was promoted to the Memphis Redbirds. After he hit .252/.313/.469 with 8 HR in 43 G to start off there, he joined Team USA for the 2015 Pan American Games. His solo homer off Nabil Crismatt in the 4th started a comeback against Colombia; he later scored the winning run on a Casey Kotchman home run.
