Santos Jiménez spent three seasons in the minors. He played in the Venezuelan Summer League in 2003. In 2004, he was 1-1 with a 7.71 ERA for the GCL Reds. The next year, he allowed 3 runs in 4 2/3 IP for the GCL Reds.

In the 2008 Americas Baseball Cup, Jiménez was 1-1 with a 0.87 ERA to help Venezuela earn a spot in the 2009 Baseball World Cup.
