File this one under frivolity.

Wendy's
Roy Rogers
Chuck E. Cheese's
Kentucky Fried Chicken
Jack in the Box
Subway
Long John Silver's
Red Robin
White Castle
Sorry, I couldn't come up with anything for Arby's or Chipotle Mexican Grill.

I detect an East Coast Bias here!
You left out the following California and West Coast chains.
Carl Ray Stephens Jr. (Carls Jr.)
Del (Taco) Crandall
Jorge Rubio (Rubios Baja Grill)
(Taco)John Denny who may be the only player with two chain restaraunts in his name.
Noah (Bagels) Lowry
Also
George (Taco) Bell
Rob Domino
Roy Hardee Massey
And if you really want to strech things George and Dick Sizzler

Red Robin is a west-coast chain....actually I checked a list and those are all the ones where all the main words of the name can be done, except I missed Hardees.

How about Rod Barajas for Arby's (RB)?

Very clever! Is that where the name Arby's comes from? Somebody's initials?

I think Arby's comes from "roast beef." Surely there is a player whose nickname was "roast beef."

Don't forget the Milwaukee Brewers bullpen from the early '00s...
Ray "Burger" King
Taco "Bell" Namura
Ruben "Q-Doba" Quevedo
Mike DeJean "Mustard"

Although we think of it as a hometown thing in Atlanta, there are now Chick Fil A' throughout the country. So look at all the players with the nick name of Chick!
